Baking Soda by Arm & Hammer is a pure, multifunctional product and a natural mineral, free of aluminum and an environmentally responsible alternative to many more expensive products. When used, Baking Soda will not harm the environment, as it is biodegradable and can therefore also be used by people and animals.
Applications
Baking soda is used, among other things, as a leavening agent (as an ingredient in baking powder, but it can also be used on its own in all kinds of baked goods), an acidity regulator, a stabilizer, and in the medical field as a remedy for excess stomach acid.
Baking soda is both a cleaning product and an ingredient in baking powder. Add baking soda to the batter together with something acidic, such as buttermilk, yogurt, or lemon juice. This is essential for proper rising. Use one teaspoon of lemon juice per two grams of baking soda. Most recipes call for one teaspoon of baking soda, which corresponds to a weight of two grams. To make your own baking powder, use this ratio (for 120 grams of flour):
- half a teaspoon of baking soda;
- 1 teaspoon of cream of tartar powder or lemon juice
This baking powder cannot be stored for long and is therefore intended for immediate use. It starts working immediately when it comes into contact with an acid, so it is added to the batter as late as possible. For even distribution throughout the batter, it should be mixed thoroughly. If you want to store baking powder for longer, use the recipe below:
- 15 grams of baking soda;
- 18 grams of cream of tartar
- 11 grams of cornstarch (this is added to absorb moisture and slow down the reaction between the acid and the base.
Another simpler recipe is as follows:
- 2 parts baking soda;
- 1 part cream of tartar
- 1 part cornstarch
